Brown Turkey Hash
Ingredients
- 6 cups diced leftover turkey
- 1/3 cup butter, divided
- 1 1/2 cups diced red onions
- 1/2 cup diced red pepper
- 1 cup diced cooked potatoes
- 1/2 cup mayonnaise
- 1 tablespoon tomato puree
- 1 teaspoon paprika
- 1 teaspoon garlic salt
- 1/2 teaspoon freshly ground black pepper
Instructions
- Dice light and dark leftover turkey meat
- Remove all bones and sinews
- Heat 1 tablespoon butter in a saute' pan
- Add onions and reppers and saute' until tender
- Cool
- In a large bowl, gently combine all ingredients, except remaining butter
- In a heavy skillet, heat remaining butter to a fast bubble
- Add hash mixture
- Pack it firmly on the bottom and sides of skillet
- Cover and bake in oven at 375 degrees for 20 minutes
- Turn out onto a heated plate
- Serve with poached eggs or tomato sauce
