Buffalo Loin with Morels


  • 1 pound of buffalo loin, cut into two 8-ounce steaks
  • Salt and pepper
  • 3 tablespoons olive oil
  • 1 tablespoon chopped shallots
  • 1/2 pound clean, sliced morels
  • 1/2 cup chicken stock
  • 1/2 cup white wine
  • 1 cup heavy cream


  • Season buffalo with salt and pepper
  • In a large skillet, heat oil, add steaks, cooked to desired doneness (medium rare preferred)
  • Remove steaks and set aside
  • Sweat chopped shallots in the skillet for 1 minute
  • Add slice morels and cook for 1 minute more
  • Add chicken stock and white wine and bring to a boil
  • Cook over high heat for 6 minutes or until liquid is reduced by half
  • Add heavy cream and heat for 5 minutes or until it reaches sauce consistency
  • Season Morels with salt and pepper
  • Serve buffalo steaks over moreals
